Kenshô: Innovation and Tradition in Mediterranean Sake – Diplocat

Kenshô was a finalist in the 2019 Premios Pimes, in the Diplocat category, for its business image abroad. This recognition highlights its commitment to protecting Delta del Ebro rice and its ability to merge Japanese and local rice-growing traditions. Since its inception, Kenshô has worked to offer high-quality products, respecting the legacy of rice cultivation in the Mediterranean and blending it with ancestral Japanese techniques.

Producing sake with local rice was not just a business decision—it was a philosophy. Kenshô always knew its purpose went beyond making a beverage. Its mission is to innovate, respect the environment, and promote the richness of the Delta del Ebro’s rice-growing culture. Betting on artisanal Mediterranean sake, crafted with locally sourced ingredients, was a challenge in a market traditionally dominated by Japanese producers. However, Kenshô’s team always believed in the project, convinced that the Mediterranean could also be a place where sake had its own identity.

Thanks to this vision, Kenshô has brought handcrafted sake, miso, and koji to gastronomy lovers. Its product is not just a drink but the result of a fusion between two cultures with a deep-rooted history in rice cultivation. The combination of Japanese techniques with local raw materials has resulted in a unique, authentic, and high-quality sake, tailored to the Mediterranean palate.

Progress and Recognition

This recognition from the Premios Pimes and Diplocat reinforces Kenshô’s commitment to sustainability, tradition, and innovation. The company aims not only to stand out in the market but also to become a reference in spreading sake culture across Europe. Each bottle reflects the effort, passion, and dedication to keeping the heritage of Delta del Ebro alive while elevating it to new heights.

The journey does not stop here. Kenshô will continue working with dedication to expand sake culture and explore new avenues of innovation. Its goal is to keep surprising the most refined palates and establish Mediterranean sake as a prestigious alternative in the world of fermented beverages.
