Vegan Cheese
Vegan cheeses are made without animal milk. For its preparation, a vegetable ingredient is used such as soy, rice or nuts that will be transformed to achieve the ideal flavor and texture.
Fermentation is the key to Kenshô preparations and vegan cheeses. Thanks to koji and miso we ferment any vegetable base to achieve the flavor (umami), textures and nutritional benefits that we like so much.
Many of the vegan cheeses are made with our miso and koji. That’s why they are so good.
