The great peculiarity of Kenshô mirin is that it is a “hon mirin” (authentic mirin), which means that the alcohol comes from rice, rest of Kenshô sakes.
The difference with sake for cooking is that we have macerated the sake for months with sake rice to provide an extra natural “umami” and sweetness.
